Pumpkin is a highly nutritious vegetable, particularly rich in Vitamin A and minerals, which can help boost your immune system. Its supply of vitamin E may strengthen your immunity as well.

HOW TO MAKE PUMPKIN PUREE

Ingredients

1 pumpkin or butternut squash  1 tbsp olive oil  Salt (optional) 

Clean the outside of your pumpkin, cut in half and scrape out the seeds and stringy bits with a spoon.  

Step 1

Preheat oven to 400°F. Place the two pumpkin halves in a baking dish, drizzle with olive oil. Roast for 45-60 minutes or until very soft inside. 

Step 2

Once baked let the pumpkin cool slightly. Place in food processor or blender and puree until smooth. Let cool completely before using.
