1 butternut squash  1 small fresh ginger 2 cups vegetable stock  salt

Peel and cut the butternut squash into small cubes. Roast it in the oven for 30-40 minutes at 375ºF/180ºC until softened.

Step 1

In the meantime peel the ginger and cut it into small pieces. Heat a large nonstick pot over medium heat and saute the ginger for 2 minutes.

Step 2

Add the roasted butternut squash and salt and pepper. Pour the vegetable broth into the pot. Cook for 10 minutes.

Step 3

Use an immersion blender or food processor and blend the soup until smooth and creamy.

Step 4

Season to your taste. Top with your favorite toppings and serve!
