These soft apple cookies are made with dreamy maple syrup icing. These are perfect fall cookies to whip up this weekend and enjoy with a cup of chai latte!
Who is up for super soft and delicious apple cookies? Honestly, everyone needs to try these super soft, fudgy, and moist cookies with a hint of cinnamon and the most dreamy maple syrup icing. They are spiced with a hint of cinnamon, nutmeg, and seasonal apples! I understand that it might sound weird to add fruit into your cookies but until you try these don’t judge.

Ingredients
- Butter or coconut oil
- Whole Wheat Flour
- Apples
- Egg
- Light Brown Sugar
- Baking Powder
- Spices: Cinnamon, Nutmeg
- Maple Syrup
- Icing Sugar
- Pecans
How to make these Soft Apple Cookies
- Preheat oven to 350F and line baking sheets with parchment paper. Whisk together flour, cinnamon, baking soda, and salt.
- In a bowl combine melted butter and brown sugar and mix until smooth and creamy.
- Mix in egg and vanilla extract.
- Peel and cut the apples into small pieces. Toss apple pieces with lemon juice.
- Add flour mixture to dough mix until combined, then mix in apples. Let the dough chill in the fridge for 30 minutes.
- Scoop dough out using a medium cookie scoop and drop it onto prepared baking sheets 2 inches apart.
- Bake in the oven until cookies for 12 minutes. Do not overbake them!
- Let it cool completely before frosting. In the meantime prepare the frosting.
- In a small bowl whisk the sugar, maple syrup, and splash of milk.
- Once these cookies are cooled, frost with the maple frosting and top with chopped peanuts or any other nuts or spices
Tips and Tricks
Let the cookie dough chill to make your life easier. It will be sticky if you will make the cookies right away.
Do NOT OVERBAKE the cookies. This is really important, otherwise, the cookies will be hard and not chewy.

- 1/2 cup / 100 grams light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/3 cup / 200 grams whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Maple Glaze
- 1 teaspoon maple syrup
- 2 cups (200 grams) icing sugar
- splash of milk
Topping
- 1/2 cup / 50 grams pecan nuts
