Ingredients
This healthier banana bread is actually really easy to make. I honestly love this recipe just as much as classic banana bread and I love that it’s lower in sugar, calories and fat
- Eggs: Using 2 large eggs in this banana bread recipe, gives it a tender texture and also adds protein. To make this recipe vegan, you can use flax egg.
- Coconut Oil: Coconut oil is a great replacement for oil and/or butter that you would typically find in banana bread. For a oil-free banana bread, use a peanut butter, it works well too.
- Bananas: The bananas also help to add moisture and doing a great job of replacing sugar in some baked goods. For best results, use extra ripe bananas that have some brown spots (they are the sweetest bananas out there).
- White Whole Wheat Flour/ Oat Flour : I literally tried all of them and all of them works great in this recipe and is a healthier alternative to white flour. These 3 flours I used have more nutrition than regular all-purpose. It also adds a nutty delicious flavour to the bread.
- Light Brown Sugar: Adding just a tiny amount of brown sugar gives this bread the perfect amount of sweetness. This is completely optional, though.
- Cinnamon: Wait for the heavenly smell in your kitchen when you bake this banan bread!
How to make this Snickerdoodle Banana Bread
To make this bread perfect, follow these few easy steps below.
- Preheat the oven to 350ºF/180ºC and grease a loaf pan with coconut oil.
- Combine 1/3 cup of brown sugar with 2 teaspoons of cinnamon. Sprinkle a few tablespoons of the cinnamon-sugar mixture around the loaf pan, coating it as best as possible and set aside.
- In a large bowl, whisk together mashed bananas, melted coconut oil, sugar, and eggs until combined.
- Stir in the flour, baking powder, baking soda, and cinnamon. Mix until combined and no lumps remain.
- Pour half of the batter into the prepared loaf pan and sprinkle with the prepared sugar-cinnamon mixture (save some on top).
- Pour the rest of the batter and again sprinkle with sugar-cinnamon mixture.
- Bake for 50-60 minutes, or until a knife inserted in the center come out clean.
- Allow cooling in the pan completely before slicing.
Substitution
In this recipe you can use any type of flour you like, I prefer to use white whole wheat flour but all-purpose flour will work perfectly fine. If you are going for a vegan version, swap the eggs for flax eggs.
