These Healthy Oatmeal Pancakes are a perfect nourishing breakfast made from just a few simple ingredients. Enjoy this healthy recipe as a brunch with friends or a fancy weekend breakfast.
I must confess I have always loved pancakes since I was little. Every Sunday morning we were having pancakes for breakfast and I am still making them today for Sunday brunch. However, don’t be fooled these pancakes are healthy and you can enjoy them every day.
If you are looking for healthy vegan pancakes this recipe is right for you. They are super fluffy and light and you can enjoy them with whatever you like. I love these with all types of fruit and nut butter. But you can also serve them with your favourite vegan yoghurt or if you making them in fall try to add caramelized apple or pear.
Ingredients
- Rolled Oats – You can also use porridge oat or already made oat flour.
- Almond Milk – I love cooking with Almond Milk but you can use any plant based milk in this recipe.
- Flax Seeds – Flax seeds will be used to make flax egg as a substitute to normal egg.
- Coconut Oil – For frying I used coconut oil but you can use cooking spray or sunflower oil.
- Cinnamon – I added a 1 tablespoon of cinnamon into the batter but you can leave this out.
- Maple Syrup – To sweeten the pancakes I used maple syrup.
- Fresh Berries – Any type of berries or fresh fruit works great! I love blueberries, raspberries and strawberries.
- Crunchy Peanut Butter – Pancakes without peanut butter? No thank you! Crunchy peanut butter is the best.
How to make these Healthy Oatmeal Pancakes
These pancakes are super easy to make, just follow these few steps to get super fluffy pancakes.
- Start by preparing the flax egg. Mix 1 tablespoon of flax seeds with 3 tablespoons of water and let it stand for 5 minutes.
- In a blender add oats and blend until flour consistency is reached.
- In a mixing bowl, add the blended oats, almond milk, flax egg, baking powder, cinnamon, and maple syrup.
- Mix until combined.
- Heat up the coconut oil in a large pan and pour a scoop of batter into the pan. Cook for 2-3 minutes from each side.
- Top with peanut butter, fresh fruit, and a splash of maple syrup.
Tips to make fluffy pancakes
If you want to have fluffy pancakes, you need to have patience! Cook them on low heat. It takes longer but won’t regret it.
Do NOT overmix the batter. This is really important as the batter will be hard and not fluffy at all.
Can I substitute any ingredients?
Yes, you can use any plant-based milk in this recipe. Sometimes I used Oat or Soya milk. You can also use a normal egg if not vegan.
