These Easter egg Rocky Roads are all time fun desserts to make with your leftover easter chocolates. Sweet creamy chocolate base made with Lyle’s Golden Syrup and filled with digestive biscuits, mini eggs, marshmallows and hazelnuts.

If you are looking for the perfect dessert to make with your family during Easter look no further. Rocky Roads are foolproof, kids-friendly, customisable and so easy to make in just one bowl. If you can melt chocolate, you can make this rocky road recipe. It’s that easy.

What I love about this recipe is that you can add literally anything to this recipe from your favourite chocolate bars to all kinds of nuts and dried fruits. This recipe is made with Easter Mini Eggs, Digestive Biscuits, Marshmallows and Hazelnuts.

Ingredients

For the rocky road base you will need chocolate, butter and Lyle’s Golden Syrup. Then you can add all your favourite, it’s infinitely customisable.

  • Milk chocolate 
  • Unsalted Butter
  • Lyle’s Golden Syrup
  • Digestive Biscuits
  • Hazelnuts or almond, chopped
  • Mini Marshmallows
  • Easter Mini Eggs

How to make the Easter Egg Rocky Roads

This no bake recipe is simple to make in one bowl, follow the steps below or watch the video instructions.

  1. Put the milk chocolate, golden syrup and butter into heat-proof bowl and place above a saucepan of boiling water. Melt until fully melted and smooth, stirring occasionally. You can also melt it in microwave.
  2. Allow to cool for 10 minutes before adding the rest of the ingredients. Add the digestive biscuits, mini marshmallows or fudge pieces and mini eggs. Mix well until everything if coated in chocolate mixture.
  3. Line a small baking tin with parchment paper. Transfer the rocky road mixture into the lined baking tin and press down with the back of the spoon or glass. Top with more easter egg.
  4. Place in the fridge to set for 2 hours or overnight. Carefully cut into 16 equal squares. Eat straight away or store in an airtight container for 3-4 days.

Can I substitute any ingredients?

Yes, this recipe is fully customisable. You can add your favourite nuts, dried fruit, biscuits, chocolate bars or fudge pieces. Just stick to the ratios in the recipe.

  • Dried Fruit (dried raspberries, raisins, dates, coconut)

  • Maltesers for crunch

Tips

When melting the chocolate be careful not to overheat the chocolate as it might seize and form a gritty, rough paste. If this happen try to add more butter and chopped chocolate to the seized chocolate and stir vigorously until the mixture is smooth. 

Let the chocolate mixture cool down to avoid melting of the mini eggs. However, when adding all ingredients into the chocolate mixture work fast as the chocolate will set quickly.

  • 4 cups / 350 grams Milk Chocolate
  • 1/3 cup / 80 grams Unsalted Butter
  • 1/3 cup / 60 grams Lyle's Golden Syrup
  • 1 cup / 150 grams Digestive Biscuits (broken into pieces
  • 1/2 cup / 50 grams Hazelnuts or Almonds, chopped
  • 1/2 cup / 50 grams Mini Marshmallows or Fudge pieces
  • 1 pack / 80 grams Mini Eggs (plus more for topping if desired) 

Instructions
 

  • Line a small baking tin with parchment paper.
  • Put the milk chocolate, golden syrup and butter into heat-proof bowl and place above a saucepan of boiling water.
  • Melt until fully melted and smooth, stirring occasionally.
  • Allow to cool for 10 minutes before adding the rest of the ingredients.
  • Add the digestive biscuits, mini marshmallows or fudge pieces and mini eggs.
