Healthy, delicious, and super easy Grilled Chicken Avocado, Strawberry, and Spinach Salad recipe lightened with homemade vinaigrette dressing!
If you are up for a light and absolutely delicious salad like me, you definitely have to try out this recipe. I absolutely love making salads during hot summer days for light lunch! I am a fan of any kind of salad and usually combine all random ingredients that I love. That’s how I came up with this combination and let me tell you it’s absolutely delicious. You might think that avocado, spinach, and strawberries do not work together but give it a go and you will get it!
Ingredients
This Grilled Chicken Avocado, Strawberry, and Spinach Salad are actually really easy to make as most of my recipes. Here is a list of ingredients that you will need:
- Chicken Breast – I always use boneless and skinless chicken breast to make my life easier.
- Avocado – Always use ripe avocado!
- Strawberries – now is the season! I love delicious fresh strawberries that are sweet and juicy.
- Spinach – Organic spinach leaves work the best. You can also swap for your favourite
- Blueberries – These are optional but if you want to get little bit more sweetness in you dish
- these are perfect.
- Pecans – adds a nice crunchiness to this light and delicious salad.
- Olive Oil – extra virgin olive oils is the best!
How to make the Chicken and Avocado Salad
- Rub the chicken breasts with 1 tbsp olive oil, salt, and pepper. Place pan over a medium heat and cook the chicken 6-8 minutes from each side.
- In the meantime, prepare your veggies. Cut the strawberries in quarters, slice the avocado and wash the fresh spinach.
- Once the chicken is done, remove it from the pan/grill and transfer it to a cutting board.
- Allow it to sit for a few minutes, then slice and set aside. Slice the grilled chicken into slices and set aside.
- For assembling, place the fresh spinach in a large bowl. Add avocado slices, strawberries and blueberries. Top off with pecan nuts.
- If you want, you can create a homemade vinaigrette dressing. Mix olive oil with lemon juice and salt and pepper.
- Drizzle the prepared dressing on top of the salad and serve. I love to serve this salad with freshly baked french baguette or seeded crackers.
Tips
This simple recipe requires just a few steps but there are some things you want to pay attention to!
- Try to stick to the recipe and try out the homemade dressing!
- Grill the chicken until fully cooked! If you are not sure if the chicken in cook throughout
- Make the dressing from scratch! I tried many store-bought dressings but none of them tastes as good as homemade healthier version!
Can I substitute any ingredients?
You can definitely be creative with the vegetable you are using but I would recommend you stick with all the ingredients in the recipe! You will be surprised by how well these ingredients work together.
